This lasagne is a lighter version of the traditional recipe with cottage cheese replacing the rich cheese sauce.
It's great for making in the weekend when you've got some time then pulling out for a quick and delicious mid-week meal that will please the whole family.
Ingredients:
- 1 onion
- 3 cloves garlic
- 500g prime beef mince
- 1 tsp sugar
- salt and pepper
- 3 tbs tomato puree
- 2 cans chopped tomatoes
- 1 tbsp mixed dried herbs (I like a mix of thyme and oregano)
- 500g light cottage cheese
- 2 cups (aprox) grated mozzarella or pizza plus cheese
- 1 box pasta sheets
Method:
- Put chopped garlic and onion in a pan and cook on a low heat. Add mince and cook until browned.
- Add sugar, salt and pepper, tomato puree, cans of chopped tomatoes and dried herbs. Simmer for at least 20 minutes.
- Put a thin layer of the sauce mix into the bottom of your lasagne dish. Top with one layer of pasta sheets, then a layer of cottage cheese, then a layer of meat sauce sprinkled with mozzarella cheese.
- Repeat layering to the top of the dish finishing with the mozzarella cheese layer on top.
- Bake in a 180 degree oven for 30 minutes.
