Light Lasagne

Light LasagneThis lasagne is a lighter version of the traditional recipe with cottage cheese replacing the rich cheese sauce.

It's great for making in the weekend when you've got some time then pulling out for a quick and delicious mid-week meal that will please the whole  family.

Ingredients:

  • 1 onion
  • 3 cloves garlic
  • 500g prime beef mince
  • 1 tsp sugar
  • salt and pepper
  • 3 tbs tomato puree
  • 2 cans chopped tomatoes
  • 1 tbsp mixed dried herbs (I like a mix of thyme and oregano)
  • 500g light cottage cheese
  • 2 cups (aprox) grated mozzarella or pizza plus cheese
  • 1 box pasta sheets

Method:

  1. Put chopped garlic and onion in a pan and cook on a low heat. Add mince and cook until browned.
  2. Add sugar, salt and pepper, tomato puree, cans of chopped tomatoes and dried herbs. Simmer for at least 20 minutes.
  3. Put a thin layer of the sauce mix into the bottom of your lasagne dish. Top with one layer of pasta sheets, then a layer of cottage cheese, then a layer of meat sauce sprinkled with mozzarella cheese.
  4. Repeat layering to the top of the dish finishing with the mozzarella cheese layer on top.
  5. Bake in a 180 degree oven for 30 minutes.
